Today I’ve put together my list of favorite chicken recipes. While none of these recipes are earth-shattering-ly new, they are the ones that have stood the test of time in my house and are well-loved favorites. Some are great for quick, weeknight meals. Others are warm and hearty comfort dishes (and who doesn’t need some comfort food during these times?). I always find it interesting to see what others are cooking , to see if I can find a new favorite. Chicken Parisienne
This was my favorite dish as a kid. When my mom would ask what I wanted for dinner on my birthday, I would always say Chicken Parisienne. It’s not an especially complicated or fussy dish, but the warm, creamy goodness is my perfect idea of comfort food.
4-6 chicken breasts
1 tbsp butter
one 10oz can cream of mushroom soup
1 cup sauteed mushrooms
1 cup sour cream
1/2 cup red wine vinegar or sherry
paprika
Place the chicken in a shallow baking dish with the butter sliced on top. Combine the remaining ingredients, except for the paprika, in a bowl and pour over the chicken. Sprinkle paprika on top and bake at 350 degrees F for 45 minutes or until tender. Serve with rice and roasted veggies.
Chicken Pot Pie Crumble
I love chicken pot pie, but I’m not always a fan of the crust. In this recipe, you make the filling in a baking dish, and then top with a very easy crumble/bread topping. Delicious, and easier than traditional chicken pot pie if you ask me.
Orange Chicken
I must admit, it’s been a while since I have made orange chicken. Usually we make Trader’s Joe’s Mandarin Orange Chicken when we have a craving for orange chicken. However, this version of orange chicken is delicious! Pro tip: you can make extra sauce and freeze it for an easy dinner down the road.
Firecracker Chicken Meatballs
My husband made this appetizer for a party a while back, and it was an instant hit. He has to swat me away from eating them all before the guests arrive! You could probably pair this with some rice and a veggie and have this be your main dish as well. This recipe was also featured in my list of favorite appetizers and I thought it was worth also listing here because it’s just that good.
Poppyseed Chicken
My good friend introduced me to the deliciousness that is Poppyseed Chicken a while ago, and I’ve been a lover ever since. Similar to Chicken Parisienne, this dish is easy to throw together on a weeknight and reheats like a champ.
Slow Cooker Garlic and Brown Sugar Chicken
Who doesn’t love a good slow cooker recipe? Throw in all of the ingredients and forget about it until dinnertime. Pair with rice and green beans for an easy, delicious weeknight dinner.
Apricot Glazed Chicken Thighs
We traditionally don’t eat many chicken thighs in our house, mainly because the husband doesn’t like dark meat. However, this is one recipe where I’ll buy the boneless, skinless chicken thighs. You could easily substitute chicken breasts if you prefer. This recipe is easy because I usually have all of the ingredients on hand (or I only need a jar of apricot preserves). It’s an easy weeknight meal and I would imagine it would be approved by kiddos, too. Serve with rice and oven-roasted okra or your choice of veggie.
